Summer Grilling – Grilled Balsamic Tofu and Asparagus

Summer is coming!

Grilled Balsamic Tofu and Asparagus

Grilled Balsamic Tofu and Asparagus

Which calls for more grilling!!  When it’s way too hot to cook inside I am always looking for easy dinners to grill up in the backyard, and this Grilled Balsamic Tofu and Asparagus recipe is one of my go-to recipes!  The balsamic tofu mixed with the cool cucumber and avocado just go hand-in-hand for the perfect warm weather meal.

This recipe is quick, easy and good hot or cold, makes great leftovers!

Tofu Grilling Tips

My husband and I are obsessed with grilling tofu and have discovered a few tips along the way:

  • Use Extra Firm Tofu for the best outcome
  • The longer you marinade your tofu the more flavor it will adsorb
  • To avoid your tofu from sticking to the grill, use a heavy duty tin foil and spray with cooking spray to cook your tofu on
  • Add some of your marinade as grilling by drizzling on top of your tofu
  • Grill tofu to your liking, we like ours more done and crispy on the outside

Hello June & Grilled Vegan Roasted Carrot Sandwiches

Hello June

Hello June

Hello June!

Feels like this year is just FLYING by!  I mean really, it’s June already?!  When did that happen?

With June now here it’s that slap in the face saying, “ummm…hello it’s bathing suit season!” Ugh, those three little words every woman hates: bathing-suit-season.

Soooo, time to clean up the diet, brush off my shoulder injury and get back to Barre and healthy eating!  My husband wasn’t too interested in a “carrot sandwich,” but I got him to try it and…. he loved it!!  He was shocked a “carrot sandwich” could actually taste good lol!

What makes this sandwich so good is not just the roasted carrots, but the hummus, avocado, arugula and then to top it off -> grilling it!  Delish!

Benefits of Carrots

Carrots are one of the healthiest veggies out there you can eat.  AND you can pretty much always find them at any grocery store, gotta love that.  Want to know what else is great about carrots?

Vegan Spring Time Pasta Salad

Spring time calls for pasta salad!

My husband celebrated his birthday last weekend, the big 48!!  In honor of his birthday we enjoyed a backyard barbecue will a few of his favorites!

On the menu, our favorite vegan burgers (seriously, these are the BEST for grilling!!) on the grill along with some grilled veggies and of course – his favorite Vegan Spring Time Pasta Salad!

Ancient Harvest Quinoa Super-grain Elbow Pasta

Number one thing I love best about this pasta salad – it’s super easy to make! I do like to make it up the day before, I think letting it sit for a day makes it only BETTER.

Quick and Easy Vegan French Toast

Quick and Easy Vegan French Toast – Let’s Eat Breakfast!

If you know me by know you know that I love weekend breakfast.  I adore weekend breakfast.  I pre plan weekend breakfast.  I dream about weekend breakfast lol!

Oh, the smell of heaven!

Weekends are not complete without the smell of breakfast cooking early in the morning floating through out the house.

I do have to admit that one challenge I have had since I began eating a vegan diet was finding a good French Toast recipe.  Most all of the recipes that I had tried just made a super soggy mess and just ended up down the drain. Not a good way to start your morning for sure!

After trial and error I found there are a couple of key elements when it comes to make Vegan French Toast.

  1. The batter needs to be on the thick side
  2. Let the batter set for a full 15 minutes
  3. Older bread works better than fresh soft bread
  4. Cook slowly

Chocolate Vegan Maca Bars

The Power of Maca

Maca Powder

Last week I posted about Maca Powder and my interest of the benefits it offers.

  • Highly Nutritious
  • May help alleviate menopausal symptoms, including hot flashes and interrupted sleep
  • Can improve your mood
  • Boost your energy level
  • May improve your memory

I have read that adding Maca Powder to your diet could take up to a month before seeing results, but having used for a week now I really feel like I have more energy.

There are several different types of Maca on the market: red, black, yellow and premium.  I started out with yellow, but I think next time I might try the red.  If you’re unsure which one to start with I found this great Maca Finder to help determine what Maca and how much might be right for you.

Sunday Prep – Mason Jar Quinoa Salads

I am all about the Sunday Food Prep!

Truly I do not know how people can eat out everyday at work.  Maybe I would just rather spend that money on shoes or something better than a Wendy’s Salad, but that’s just me.  Or do you feel the same way?

Want a easy grab and go lunch straight from your own fridge at home?

THIS recipe is for you!  Best part – you add or change out veggies to your liking!  I spend part of my Sunday’s prepping for the week, and not just for ME – I make enough for my husband and daughter (I double the below recipes).

NOTE: I do NOT add salad dressing until ready to serve.  I have found this is KEY to salad prepping and not ending up with a soggy mess of a salad come later in the week!

My go to salad dressing is super easy to whip up and store in the fridge. ->  ->

Vegan Chocolate Peanut Butter Balls

Here comes Peter cottontail, hopping down the bunny trail!!

Who doesn’t love all of the pastel colored isles at the grocery store this time of the year?!?  Peeps, chocolate bunnies, chocolate covered eggs, jelly beans…I think you know what I’m talking about. LOL!

Thank goodness eating a vegan diet SAVES me from those isles!!   However, there are days that I crave something sweet and oh so bad for me! I use to LOVE Reese Peanut Butter eggs this time of the year and have really missed them.  Nothing like peanut butter and chocolate together.  Pure sugar heaven!

Pulled Sweet Potato and Mango Slaw

Pulled Sweet Potato and Mango Slaw

Hello Pulled Sweet Potato!

Before going to a vegan diet I use to love pulled pork, or maybe it was just the sweet BBQ sauce that did it for me!  I thought my BBQ loving days were over until I came up with this little beauty!

This can be served a little fancy like mine or old school pulled BBQ sandwich style.  Perfect for Spring family BBQ’s!

Pulled Sweet Potato and Mango Slaw

Pulled Sweet Potato and Mango Slaw

There are four parts to this recipe:

  1. Homemade BBQ Sauce (you can use store bought if you’d rather)
  2. Mango Slaw
  3. Pulled Sweet Potato
  4. Authentic Italian Chickpea Flat Bread (or other options from below)

The sweet of the pulled sweet potato, tangy BBQ sauce and spicy/sweet mango slaw all topped on the chickpea flat bread – just go together like PB&J!! Pure heaven!

Options for serving the Pulled Sweet Potato and Mango Slaw – of course you can use a bun, you could serve over a bed of lettuce or even on crackers.  I love BREAD, but it’s one of those things we try not to eat.  I found this recipe for Authentic Italian Chickpea Flat Bread from In Pursuit of More. It is quick and simple to make while your Pulled Sweet Potato is cooking.

The BBQ sauce can be made up to a week before and stored in the refrigerator.  I almost think sitting for a couple of days really enhances the flavor.

Easy Oil Free Sun Dried Tomato Hummus

Have you ever bought hummus at the grocery store? I’m pretty sure you have, but have you ever read all of the ingredients in that hummus?  For something that is suppose to be healthy for you, what’s with all of the crap in it?!  Especially all of the oil!

Que The Oil Free Hummus!

Just because oils like Olive Oil are suppose to be good, doesn’t mean they are good for youJust two tablespoons of Olive Oil packs in 240 calories! Most fundamentally, olive oil, like all oils and fats, are a concentrated source of calories. With over 4,000 calories per pound, olive oil is far more calorie dense than even pure refined sugar, which has 1,725 calories per pound. Because of its extremely high calorie density, adding olive oil to any food or meal will dramatically increase its calorie density. Crazy!

Hands-down The Best Vegan Nacho Cheese Sauce

When we stopped eating dairy products a few years ago one of the first things I searched for was a GOOD Vegan Nacho Cheese Sauce recipe.  I played with several, had some bad fails, but in the end found the perfect recipe – perfect for mac and cheese, nachos, dipping sauce, basically if you love a good Nacho Cheese Sauce this one is for YOU!

“NOT”cho Cheese!

This recipe is really easy to make.  Who knew using veggies you could make awesome creamy cheese?!? I have made amazing mac and cheese recipes using this – added in some roasted Brussels Sprouts – OMG yum! Super Bowl we use the cheese sauce and add diced tomatoes and soy Chorizo again – OMG yum!  The possibilities are endless I promise you.

I have served this Nacho Cheese recipe to my non-vegan family members and NO ONE guessed that it was packed full of veggies, a great way to get your young picker eaters to fill up on veggies!
