Vegan Rhubarb Strawberry Pie – A Memorial Day Win!

I told you I love when Rhubarb is in season when I posted my Vegan Rhubarb Strawberry Oat Bars recipe – and to prove it ANOTHER rhubarb recipe today!

Hot out of the oven, this Vegan Rhubarb Strawberry pie will melt in your mouth! Top with dairy free ice cream for the perfect Spring treat! With Memorial Day right around the corner, this would be a hit at any family get together or picnic.

What I love about this recipe for Vegan Rhubarb Strawberry Pie is that it  has three basic steps:

  1. Premade crust (sorry but I hate making pie crust and find it much easier to just buy)
  2. Rhubarb Strawberry filling
  3. Topping

That’s it!

Rhubarb is in season!!

Seriously, I lose my shit when walking down the produce isle at my grocery store and see Rhubarb for sale!  LOL!  When growing my my mom made the most AMAZING Rhubarb bread EVER!  It had this buttery sugar topping that was to die for!  I might have to see if I can dig that old recipe out and making it vegan.

Today however, we are talking Vegan Rhubarb Strawberry Oat Bars – and they are amazing!

Not too many people even know what Rhubarb is, which blows my mind!  Even the cashier ringing me up had NO idea what it was lol!

Yeah, cause I like cookies too! Especially when they are hot out of the oven.  Delish!  This is my # 1 go to cookie recipe and hits the spot when I’m having hardcore hot out of the oven chocolate chip cookies cravings!

Oh, the amazing smell of cookies cooking in the house.  Is there a better smell?  I have childhood flash backs of my dad baking cookies in the evening….just waiting for that gooey chocolate pouring from the hot cookie.  OMG, yes please!

When I think of Spring I think of FRESH strawberries

Strawberry smoothies.  Strawberry short cake.  Strawberry over-night oats.  EVERYTHING strawberry!!

I love the health benefits that strawberries offer.  Strawberries can improved eye care, proper brain function, relief from high blood pressure, arthritis, gout and various cardiovascular diseases. The antioxidants of strawberries make them good for improving the immune system, preventing against various types of cancers, and for reducing the signs of premature aging.  I’m all about reducing the signs of premature aging!!

Strawberries are rich in potassium and magnesium content, both of which are effective in lowering high blood pressure caused by sodium and various other risk factors.

Who doesn’t love all of the pastel colored isles at the grocery store this time of the year?!?  Peeps, chocolate bunnies, chocolate covered eggs, jelly beans…I think you know what I’m talking about. LOL!

Thank goodness eating a vegan diet SAVES me from those isles!!   However, there are days that I crave something sweet and oh so bad for me! I use to LOVE Reese Peanut Butter eggs this time of the year and have really missed them.  Nothing like peanut butter and chocolate together.  Pure sugar heaven!

When Life Gives You Lemons – Make Vegan Lemon Cheesecake

Is it a vegan lemon pie….or is it a vegan lemon cheesecake?!

I guess really, it could be either, but since don’t care for meringue topping and would rather use a vegan whip cream – I call it Cheesecake! Now, if you would rather top with a Vegan meringue run over to A Little Insanity and check out their recipe.

So, it’s time to hit the backyard and start bring in those lemons …or off of the trees hanging over your fence line…or that your co-workers bring in to share -> let’s make something good! This recipe is very easy and can be made into one large Cheesecake or into mini muffin size Cheesecakes too if you’d like.

Vegan Whirligig Cookies

Before I get into the YUMMY of today’s blog post I really want to take a second to thank everyone for stopping by my new blog and all of the wonderful comments!  It’s exciting and fulfilling to be back to blogging and the support has been amazing!!  So, thank you!  Okay….back to the YUMMY —>

I really had no problem giving up meat when I decided to start eating a plant based diet four years ago.  What I did have a problem with was my love of desserts.  I remember my dad always saying, “It’s the German in us!” We had to have our desserts.

I have this old binder of family recipes and things I collected WAY before the internet and Pinterest, anyone remember those days?  One of my favorite recipes was the Whirligig Cookies my dad would make.  I remember as a kid waiting for them to come out of the oven,  hot and that gooey chocolate as you bite into them, pure  heaven!

Happy Valentine’s Day!

My husband always likes to refer today as “Steak and sex night!” LOL men!  Since we have been eating a vegan diet for 4 years now, maybe it should be “Tofu and sex night??” LOL!  However, he works today (fire fighter), so I’m calling it “Tofu, wine, Netflix in bed with the pups night!”   Works for me! Side Note – yesterday in the grocery store they had EASTER stuff up! What’s up with that?!?

I do enjoy doing something special for my kids on Valentine’s Day, be it buying them a box of chocolate or a cute stuffed animal.  This year though my daughter asked for Red Velvet Cupcakes, yeah I can do that!  AND I’ll do it vegan style!

Anytime I cook something for my kids I swear I put extreme pressure on myself.  I want them to have no idea it’s vegan, that it looks non-vegan and taste like it’s non-vegan.  I want it to be perfect!  This recipe nails it!  Moist cupcake, amazing cream “cheese” frosting, it’s to die for I promise AND pretty darn easy to make!
