Hello June!

Feels like this year is just FLYING by!  I mean really, it’s June already?!  When did that happen?

With June now here it’s that slap in the face saying, “ummm…hello it’s bathing suit season!” Ugh, those three little words every woman hates: bathing-suit-season.

Soooo, time to clean up the diet, brush off my shoulder injury and get back to Barre and healthy eating!  My husband wasn’t too interested in a “carrot sandwich,” but I got him to try it and…. he loved it!!  He was shocked a “carrot sandwich” could actually taste good lol!

What makes this sandwich so good is not just the roasted carrots, but the hummus, avocado, arugula and then to top it off -> grilling it!  Delish!

Benefits of Carrots

Carrots are one of the healthiest veggies out there you can eat.  AND you can pretty much always find them at any grocery store, gotta love that.  Want to know what else is great about carrots?

  • Prevention of Heart Disease: Carrots can reduce the chances of having a heart attack
  • Immune Booster:  Carrots contain a number of antiseptic and antibacterial abilities that make it ideal for boosting the immune system
  • Digestion: Carrots, like most vegetables, have significant amounts of dietary fiber in those orange roots, and fiber is one of the most important elements in maintaining good digestive health.
  • Diabetes: Carrots are good for blood sugar regulation

All of that and they are yummy!!  Especially when grilled up to make a delish sandwich.

Grilled Vegan Roasted Carrot Sandwiches

Print Recipe
Serves: 2 Cooking Time: 25 minutes


  • 2 large Carrot
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Black Pepper
  • Pinch of salt
  • 4 Slices Whole Wheat Bread (or bread of your choice)
  • Hummus
  • 1/2 cup Arugula (or other greens of your choice)
  • 1/2 Avocado, sliced
  • 2 Tbsp Earth Balance



Preheat oven to 400˚ F.


Slice carrots into ¼” thick strips, roughly the width of your bread slices or smaller.


On baking sheet cover with parchment paper and lay out sliced carrots.


Spray carrots with cooking spray and sprinkle on garlic powder, smoked paprika, pepper and salt.


Place in oven and roast until carrots are tender and starting to brown, 20-25 minutes.


Assemble the sandwich by spreading two tablespoon of the hummus on one side of the bread then layer the lettuce, avocado and roasted carrots.


Spread 1 to 2 more tablespoons of hummus on the remaining piece of bread and add to the sandwich.


Over med-high heat on stove top, heat up a large frying pan.


Little butter the outside of the pieces of bread and add to frying pan. Grill until lightly brown, flip and grill other side.


Remove from pan, cut in half and ENJOY!

Ryder our 4 month old Cavalier foster puppy is doing great!  Sounds like his back leg may be deformed since birth and hopefully won’t give him any issues as he grows.  Happy to hear that!  He’s learning to sit and love using the doggie door – the door to his freedom lol!  Or so he thinks.
