Vegan Tomato Soup – Just like mom made!

Tomato soup WITHOUT milk or a milk alternative?  YES!

When IVegan Tomato Soup - Just like mom made! decided to start eating a vegan diet one thing I most missed was creamy tomato soup.  Nothing says love like tomato soup and grilled cheese sandwiches.  Just ask my kids, they would agree!

I played around with several recipes, but hated using Almond or Soy Milk.  It just never looked right or tasted creamy.

Then one day I read an article about Cauliflower and how it’s used so many different ways, AND could be used for a “creamy” like texture.

Hello?!? Was cauliflower the answer to my dreams?!?

I can seriously could live off of tomato soup and grilled cheese and now -> I CAN!

Vegan Tomato Soup - Just like mom made!

Print Recipe
Serves: 8 Cooking Time: 60 Minutes


  • 3 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 1 medium Yellow Onion, diced
  • 1 Red Bell Pepper, diced
  • 2 28-ounce cans Whole Peeled Tomatoes in juice
  • 1 15 oz. can Tomato Sauce
  • 3 tbsp Tomato Paste
  • 1 head of Cauliflower, roughly chopped
  • 1 tsp Dried Oregano
  • 1/4 cup Fresh Basil, chopped
  • 1 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 3 tbsp Nutritional Yeast
  • 1/2 to 1 cup water or vegetable broth (if needed to thin soup)



Add olive oil to a large stock pot and heat over medium heat.


Add in garlic and onion. Cook for 3-5 minutes until tender.


Add in the red bell pepper and cook for another 2 minutes.


Slowly pour in the whole tomatoes, tomato sauce, add the cauliflower, oregano, basil, and red pepper flakes.


Using a spoon submerge the cauliflower pieces in the tomato liquid as much as possible so that they fully cook.


Bring the mixture to a boil. Reduce heat, cover, and allow the mixture to simmer vigorously for 30 minutes.


Add in tomato paste, stir and turn off heat and let soup set for about 10 minutes.


Using a immersion blender or blender, blend until smooth. If you are using a blender, working in small batches. Cover top of blender lid with a towel to keep your hand safe. Soup is very hot.


Add in salt (to taste) and nutritional yeast. Simmer on low for an additional 10-15 minutes, stirring occasionally. If soup is thicker than desired, add in 1/2 to 1 cup water or vegetable broth and whisk into soup.

With Poppy being adopted it’s time for a new foster member of the family – welcome Ryder!  This adorable little guy is five months-old and from a puppy mill.  Despite coming from a mill he’s doing great!  We are planning on seeing the vet regarding one of his back legs.  It’s larger and kind of odd shaped, not normal. Other than that, he’s a spunky little puppy!  OMG, he’s a PUPPY! I’m tired! LOL!
