If you know me by know you know that I love weekend breakfast. I adore weekend breakfast. I pre plan weekend breakfast. I dream about weekend breakfast lol!
Oh, the smell of heaven!
Weekends are not complete without the smell of breakfast cooking early in the morning floating through out the house.
I do have to admit that one challenge I have had since I began eating a vegan diet was finding a good French Toast recipe. Most all of the recipes that I had tried just made a super soggy mess and just ended up down the drain. Not a good way to start your morning for sure!
After trial and error I found there are a couple of key elements when it comes to make Vegan French Toast.
- The batter needs to be on the thick side
- Let the batter set for a full 15 minutes
- Older bread works better than fresh soft bread
- Cook slowly

Quick and Easy Vegan French ToastPrint Recipe
- 1 cup Almond Milk (or other dairy free milk)
- 2 tbsp Coconut Flour
- 1 tbsp Ground Flax Seed
- 2 tbsp Brown Sugar
- 1 tsp Cinnamon
- 1/2 tsp Vanilla
- 1 Banana, ripe and peeled
- 1/8 tsp Salt
- 8 Slices Bread (older bread works better)
In a blender add banana, almond milk, coconut flour, ground flax seed, brown sugar, cinnamon, vanilla, and salt.
Blend until smooth. Let set for 15 minutes.
Heat skillet to low/medium heat and lightly grease with spray oil.
Dip each slice of bread into mixture, flipping to ensure entire slice is lightly covered (dip quickly).
Cook on skillet about 5 minutes, flipping to cook each side until brown and slightly crisp.
Serve immediately, topping with granola, powdered sugar, or fresh fruit.
If only making a small batch of French Toast, save left over batter in mason jar in the refrigerator for up to two weeks.
