Rhubarb Season Calls for – Vegan Rhubarb Strawberry Oat Bars

Rhubarb is in season!!

Seriously, I lose my shit when walking down the produce isle at my grocery store and see Rhubarb for sale!  LOL!  When growing my my mom made the most AMAZING Rhubarb bread EVER!  It had this buttery sugar topping that was to die for!  I might have to see if I can dig that old recipe out and making it vegan.

Today however, we are talking Vegan Rhubarb Strawberry Oat Bars – and they are amazing!

Not too many people even know what Rhubarb is, which blows my mind!  Even the cashier ringing me up had NO idea what it was lol!

So, what exactly is Rhubarb and why is it good for you?

  • It is widely considered as a vegetable, but in America, it is considered a fruit.
  • The stalks of rhubarb are the only things eaten, the triangular leaves are extremely high in oxalic acid, which can cause severe illness in people.
  • Normally in season during Spring, but can sometimes be found year around due to green house growing.
  • Packed with minerals, vitamins, organic compounds, and other nutrients that make it ideal for keeping our bodies healthy.
  • One of the lowest caloric vegetables on the market, and as such, it is often recommended for people who are struggling to lose weight, but still want to remain healthy.
  • Rhubarb is extremely low in fat and cholesterol.

Just remember to keep the leafs away from dogs and small children since they can make both sick.  However, my Cavalier Mazie is down with trying a Vegan Rhubarb Strawberry Oat Bar!

Vegan Rhubarb Strawberry Oat Bars

Print Recipe
Serves: 9 Cooking Time: 50 Minutes


  • 1 cup All-Purpose Flour
  • 1/3 cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/3 cups Rolled Old Fashioned Oats
  • 1 tsp Cinnamon
  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Sugar
  • 3/4 cup Earth Balance (or any vegan butter), melted
  • 2 tsp Vanilla Extract
  • 1/4 cup Walnuts (optional), chopped
  • 1 1/2 cups Rhubarb, diced
  • 1 3/4 cups Strawberries, diced
  • 1 tbsp Lemon Juice
  • 1/3 cup Sugar
  • 1 tbsp Cornstarch



For the bottom crust layer:


Preheat oven to 350 degrees.


Using a 9 by 9-inch baking dish, line with parchment paper, lightly spray with cooking spray.


In a mixing bowl whisk together flour, coconut flour, baking soda and salt. Add in oats, cinnamon, brown sugar and sugar and blend well.


Add vanilla and melted butter over oat mixture. Stir with a fork until mixture is evenly moistened.


Optional - add in walnuts, mixing well.


Press 2/3 of the oat mixture into prepared baking dish, saving 1/3 cup, set aside for topping.


For the rhubarb strawberry filling:


In a medium mixing bowl, add diced rhubarb and strawberries.


In a small mixing bowl whisk together lemon juice, sugar and cornstarch.


Pour sugar mixture over rhubarb strawberry mixture, toss to coat.


Pour rhubarb strawberry mixture over bottom oat layer in baking dish.


Evenly sprinkle remaining 1/3 oat mixture over the top.


Bake about 45 - 50 minutes, until top is golden brown and crisp.


Cool for 15 minutes, pull parchment paper from pan removing the Vegan Rhubarb Strawberry Oat Bars and then cut into squares.


Keep in an airtight container in refrigerator.


This delicious treat really hit the spot over the weekend after 5 days off of non stop master bathroom remodeling! Talking full on – new lights, faucets, paint, molding and more! I feel like my bathroom is ALMOST something straight out of Pintrest!!  Ready to start decoration and some fun DIY projects.
