Quick & Easy pretty much sums this beauty of a grilled potato recipe!

I love love LOVE this time of the year.  Windows open, fresh air, flowers blooming and the smell of dinner grilling on the barbecue – pure heaven!

Pair these Quick & Easy Grilled Garlic Red Potatoes with a vegan burger, grilled portobellos or even some vegan hot dogs and you have the perfect Spring evening meal.

Prepping Garlic Red Potatoes

I don’t like peeling my red potatoes, but you are more than welcome to do so if you do prefer peeled potatoes.

Toss potatoes with olive oil, garlic and spices – tada! You are ready to start grilling! Then it’s time to let the grill do all of the work.  Just sit back listen to the sizzling of the grilled potatoes and smell in the deliciousness!

Quick & Easy Grilled Garlic Red Potatoes

Serves: 4 Cooking Time: 30 Minutes

Ingredients

  • 1 1/2 lbs of Red Potatoes, diced
  • 2 tbsp Olive Oil
  • 3 tbsp Minced Garlic
  • 1 tsp Cayenne Pepper
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

Heat grill to med-high for 10 minutes.

Wash and dice red potatoes (you can peel if you'd like).

Place diced potatoes in a large bowl and add olive oil, tossing to cover.

Add minced garlic, cayenne pepper, salt and pepper. Mix until potatoes are well coated.

Using either heavy duty tin foil or 2 layers of regular tin foil add potatoes and fold into packets.

Don't fill packets too full, usually a 1 1/2 pounds of red potatoes will make 4 packets.

Place packets on grill and turn heat to medium setting.

Flip packets after 15 minutes and cook for another 10-15 minutes until done.

To check if done, remove one of the packets from the grill and CAREFULLY open. Using a fork check to see if potatoes are tender. Remove packets from grill when fully cooked.

Let potatoes cool for 5 minutes before serving.
