Vegan Mango Hazelnut Scones – Tropical Paradise!

Hello you beautiful mangoes!

I love the taste of fresh mangoes in the Spring.  They work in just about everything – salsa, salads, on pizza (yes, trust me it’s good!) and my favorite…in scones!

Nothing better on a weekend morning than the smell of fresh Vegan Mango Hazelnut Scones baking in the oven.  With the hazelnuts and bit of coconut flour in the recipe, it’s like tropical paradise!

New to mangoes?

There are two different types of mangoes that are normally available at most grocery stores in my area.

  • Honey Mango (pictured above) – Sweet and creamy in flavor. Vibrant yellow in color, from Mexico and peak March thru June.
  • Haden Mango – Rich, with aromatic overtones in flavor.  Bright red with green and yellow overtones and small white dots, from Mexico and peak March thru May.

Yeah, cause I like cookies too! Especially when they are hot out of the oven.  Delish!  This is my # 1 go to cookie recipe and hits the spot when I’m having hardcore hot out of the oven chocolate chip cookies cravings!

Oh, the amazing smell of cookies cooking in the house.  Is there a better smell?  I have childhood flash backs of my dad baking cookies in the evening….just waiting for that gooey chocolate pouring from the hot cookie.  OMG, yes please!

Maca Powder

Last week I posted about Maca Powder and my interest of the benefits it offers.

  • Highly Nutritious
  • May help alleviate menopausal symptoms, including hot flashes and interrupted sleep
  • Can improve your mood
  • Boost your energy level
  • May improve your memory

I have read that adding Maca Powder to your diet could take up to a month before seeing results, but having used for a week now I really feel like I have more energy.

There are several different types of Maca on the market: red, black, yellow and premium.  I started out with yellow, but I think next time I might try the red.  If you’re unsure which one to start with I found this great Maca Finder to help determine what Maca and how much might be right for you.

Sunday Prep – Mason Jar Quinoa Salads

I am all about the Sunday Food Prep!

Truly I do not know how people can eat out everyday at work.  Maybe I would just rather spend that money on shoes or something better than a Wendy’s Salad, but that’s just me.  Or do you feel the same way?

Want a easy grab and go lunch straight from your own fridge at home?

THIS recipe is for you!  Best part – you add or change out veggies to your liking!  I spend part of my Sunday’s prepping for the week, and not just for ME – I make enough for my husband and daughter (I double the below recipes).

NOTE: I do NOT add salad dressing until ready to serve.  I have found this is KEY to salad prepping and not ending up with a soggy mess of a salad come later in the week!

My go to salad dressing is super easy to whip up and store in the fridge. ->  ->

1/4 cup Honey

1/4 cup Vegan Mayo

1/4 cup Dijon Mustard

1 tbsp White Distilled Vinegar

1/4 tsp Cayenne Pepper

1/4 tsp Black Pepper

  1. In a mixing bowl add all ingredients and whisk until smooth.
  2. Keep refrigerated in a mason jar tightly sealed.

When I think of Spring I think of FRESH strawberries

Strawberry smoothies.  Strawberry short cake.  Strawberry over-night oats.  EVERYTHING strawberry!!

I love the health benefits that strawberries offer.  Strawberries can improved eye care, proper brain function, relief from high blood pressure, arthritis, gout and various cardiovascular diseases. The antioxidants of strawberries make them good for improving the immune system, preventing against various types of cancers, and for reducing the signs of premature aging.  I’m all about reducing the signs of premature aging!!

Strawberries are rich in potassium and magnesium content, both of which are effective in lowering high blood pressure caused by sodium and various other risk factors.
